Insomnia Cookies hits 300 stores with first Seattle location

Fast-growing late-night bakery concept Insomnia Cookies has reached a store milestone. 

With locations across the United States, Canada and the UK, the chain has reached 300 stores with the opening of its newest outpost in Seattle. The new store, located in Seattle's University District, is the brand's first location in the city.

This year, Insomnia Cookies is projected to open 55 new locations, surpassing the brand's highest total new store openings in a year. Through a partnership with Verlinvest and Mistral Equity Partners, the chain plans to open over 1,800 bakeries in the U.S. alone in the next decade.

In addition to expanding its store count, Insomnia Cookies debuted its global headquarters, named the "Imagine What's Possible Center," and flagship bakery this year. The company also expanded its portfolio to include transit centers with the opening of a bakery in the heart of New York City's Penn Station and an upcoming location set to open in Washington D.C.'s Union Station.
