Walk-On's Sports Bistreaux has unveiled a new scaled-down, “efficient” store prototype.

The sports bar and restaurant chain founded by two former LSU basketball players has revealed its new “next generation” store concept, which is set to debut in Baton Rouge, La., in early 2027. Designed by Madrid-based restaurant design firm Livit, the new flexible model will feature a 3,500- to 4,500-sq.-ft. footprint, compared to the brand's traditional 7,000- to 8,000-plus-sq.-ft. format.

Rather than one fixed layout, Walk-On’s says the design is built as a flexible "kit of parts," allowing franchisees to select or add key elements based on market, site and personal preference. New and reimagined elements of the store concept include enhanced sports viewing with a large-scale TV wall, improved kitchen and bar operations, a flexible lounge area, outdoor sports viewing, dedicated third-party pickup areas and more.

Walk-On’s says the new prototype builds on lessons from existing restaurants, including its 3,700-sq.-ft. location at The Battery mixed-use development in Atlanta. The upcoming Baton Rouge location will span approximately 3,688 square feet and have seating for 125 guests.

"We wanted to rethink what the Walk-On's experience can look like without losing what makes us Walk-On's," said Brandon Landry, CEO and co-founder of Walk-On's Sports Bistreaux. "The new design gives our franchisees more flexibility in where and how they build, while keeping the energy, hospitality and community connection our guests know and love."

Founded in 2003, Walk-On's Sports Bistreaux operates more than 80 locations nationwide. Co-owned by legendary NFL quarterback Drew Brees, franchisees include Dallas Cowboys quarterback Dak Prescott, former NFL star linebacker Derrick Brooks, and accomplished Clemson University football coach Dabo Swinney.
