Chicken Salad Chick to open first Minnesota location
Chicken Salad Chick will soon make its debut in the “Land of 10,000 Lakes" as it continues to expand in new markets.
The fast-casual chicken salad concept will open its first restaurant in Minnesota on July 28 in the Twin Cities suburb of Apple Valley, bringing its footprint to 24 states. The opening comes amid further expansion plans for Chicken Salad Chick in the state.
Last year, the chain signed an agreement to open 10 new restaurants in the Minneapolis area through a franchise deal with the Coffeys – a well-known family of basketball players who hail from Minnesota.
In the first quarter of 2026, Chicken Salad Chick entered several key markets, including Las Vegas, Philadelphia and Phoenix. The company now operates more than 340 restaurants across 24 states, and has over 300 locations in its development pipeline. It celebrated a record year in 2025, awarding nearly 100 new franchise restaurant deals and opening 42 locations across 14 states.
"Entering Minnesota is an incredible milestone for the Chicken Salad Chick team," said Scott Deviney, CEO and president of Chicken Salad Chick. "Minnesota has always been a priority development area for us because of its diverse economy and strong business presence, both with small businesses and larger corporations.”
The brand is known for its dozen-plus variety of made-from-scratch chicken salad flavors, fresh sides, soups, signature sandwiches and desserts.

Chicken Salad Chick's Apple Valley location is owned and operated by husband-and-wife team Mike and Mandi Boogerd, who have called the city home for more than two decades. The site offers in-restaurant and outdoor patio dining, take-out, third-party delivery and catering options.
"Mandi and I are excited to open the very first Chicken Salad Chick restaurant in Minnesota," said Mike Boogerd. "When we tried Chicken Salad Chick in Chicago last year, we were instantly hooked. Not only did the brand have such a unique product, but we recognized an opportunity to introduce something new and exciting to our fellow Minnesotans.”
