Chicken Salad Chick continues expansion; promotes three to C-suite

Chicken Salad Chick is bolstering its executive team amid ongoing store expansion.

The southern-inspired, fast-casual chicken salad restaurant chain, which was acquired by Brentwood Associates in November 2019,  has more than quadrupled in size since 2016. Chicken Salad Chick has opened 19 new restaurants so far this year and expects to open 15 more, giving it a total of 178 locations by year end. The company has set a goal of having 500 locations open by the end of 2025. 

Amid its ongoing expansion, Chicken Salad Chick promoted three executives to its C-suite, including Jim Thompson as COO, Terry McKee as chief development officer, and Tom Carr as chief marketing officer.

In other appointments, Chicken Salad Chick named Mary Lou Atkins as VP of human resources and Carrie Evans as VP of franchise development. 

“The promotions recognize the numerous contributions the longstanding leaders have made throughout their tenures and reflect the high caliber individuals taking Chicken Salad Chick to the next level,” the company said.
