Cava is continuing to enter new markets across the Midwest.

The fast-growing, fast-casual Mediterranean chain has opened its first location in Wisconsin. The 3,000-sq.-ft. restaurant in Greenfield, a southern suburb of Milwaukee, features a dining room, patio seating and digital order pickup.

The chain isn’t stopping with one location, however. Cava plans to open the doors of another 3,000-sq.-ft. location at the Hilldale Shopping Center in Madison, Wis., in mid-November.

The Badger State is just the latest new market for Cava’s expansion across the region. The chain opened its first Minnesota location last month (and 500th restaurant in total), its first Ohio location in March, and made its debut in Michigan and Indiana last year.

“Bringing Cava to Wisconsin for the first time is an exciting new chapter for our brand, and we couldn't be more thrilled to introduce our bold Mediterranean flavors to communities across the state,” said Jeff Gaul, chief development officer of Cava. “With our first restaurant opening in Greenfield and another on the way in Madison in mid-November, we're looking forward to building lasting connections with our new neighbors.”

Cava says its long-term goal is to reach 1,000 total restaurants by 2032, adding that its development strategy maintains a “balanced pipeline” across established, in-fill and greenfield markets in suburban and urban areas.

“Every opening requires tremendous coordination across teams to identify the right location, design and build the restaurant, and prepare it to become part of a new community,” said Gaul at the time of Cava’s 500th opening.
