Jersey Mike's taps Wingstop veteran as COO

Stacy Peterson is joining Jersey Mike's after leading Jeni’s Splendid Ice Creams for nearly three years.

A fast-growing sandwich chain is adding an experienced restaurant executive to its C-suite.

Jersey Mike's has tapped Stacy Peterson as its new president and chief operating officer. In the role, she will lead the chain’s U.S. operations and oversee marketing and technology while drawing on her experience to “drive innovation and operational excellence, accelerate digital transformation,” while strengthening the company’s standing in the fast-casual market.

Peterson joins Jersey Mike’s after serving as CEO at ice cream brand Jeni’s Splendid Ice Creams since December 2022. The bulk of her professional career has been spent at Wingstop Restaurants. She served two stints at the fast-casual chicken wing chain totaling more than eight years, and held multiple C-suite positions including chief revenue & technology officer, chief digital & technology officer, chief experience officer and chief information officer.

Earlier in her career, Peterson held leadership positions at Service King Collision Repair Centers, CBRE, FedEx Office and Blockbuster. Since November 2024, she has served as a board member at Tropical Smoothie Cafe.

Founded in New Jersey in 1956, Jersey Mike’s operates more than 3,000 locations in the U.S. and Canada. In 2024, the chain was acquired by Blackstone for an estimated $8 billion in a move to accelerate its global expansion and support its continued investment in technology and digital transformation.
